Green Corn Soup

We created an incredibly flavorful broth so you’ll never miss the butter, cream, or any other high calorie dairy in this soup. Commonly, this soup is served with bacon, cheese, and sour cream. We’ve added spinach to up the nutrition and balance the sweet from the Caramelized Onions and Candied Jalapeno garnishes.

Ingredients

  • 8 Ears of Corn , shucked (produces about 6 c corn kernels)
  • 2 Tbsp Avocado Oil
  • 1 Med Onion , diced
  • 2 Cloves Garlic , thinly sliced
  • 1 Tbsp Smoked Paprika
  • Sea Salt & Pepper
  • 4 ½ C Corn Kernels
  • 2 C SMART Caramelized Onion Broth
  • 1 C Spinach
  • 2-4 Jalapeno , stemmed/seeded and diced
  • 2 Tbsp Lime Juice , fresh
  • 1-2 C SMART Caramelized Onion Broth

Directions

  1. Heat saute pan over medium.
  2. Add oil and when hot add onion, garlic, and spices. 
  3. Cook until soft and fragrant.  Add 4 ½ C of corn and cook until crisp.
  4. Transfer to blender and let cool slightly.
  5. Add broth to the blender with corn mixture and process until very smooth.  Strain through a sieve, pressing on the solids.
  6. Discard the solids and return the corn to the blender. Add spinach, jalapeno and lime juice.
  7. Puree until spinach is finely chopped and soup has turned green.
  8. Transfer soup to a large bowl and stir in 1-2 Cups broth. Cover and chill for 2+ hours.
  9. TO SERVE: Ladle into bowls and top with Candied Jalapenos (see recipe below) and Caramelized Onions.
