By using the tortilla crusts we are dropping the calories from over 200 down to 85 calories. Note, 1 Tortilla is 1 full serving so it’s going to feel very ample and you won’t be tempted to just “take one more slice”. The toppings are all vegetarian which definitely keeps the calorie count low but note it would be easy to add shredded chicken, sauteed shrimp, or other protein.
Ingredients
- 1 Almond Flour Tortilla
- 1 Tbsp SMART Tzatziki
- 2 Tbsp Canned Artichoke Hearts
- 2 Tbsp Olives , cut in half
- 1 Tbsp Preserved Lemon
- 1 Oz Feta Cheese
- Sumac
Directions
- PreHeat oven to 400F.
- Place Tortilla on oven rack (no sheet pan needed).
- Bake 3 minutes on one side and about 1-2 minutes on the other, until it is crispy.
- Remove from oven and set aside.
- TO ASSEMBLE: Spread Tzatziki over the “crust” and top with artichoke hearts. Dot with olives, lemon, and cheese for more flavor. Finish with Sumac.
