Freezer Dinner – Quinoa Bowl

I love this bowl so much for many reasons. It has great color. It’s the taste of fall. And it comes together in a flash from stuff prepped in the freezer. We’ve saved so many calories with the lightened up pesto, the broccoli in the meatballs, and the beet rice replacing ½ the quinoa.

Ingredients

  • 16 Chicken Meatballs
  • 1 Tbsp Olive Oil
  • ½ Med Onion , diced
  • 1 C Riced Beets
  • Sea Salt & Pepper
  • 1 C Quinoa , cooked
  • 2 C Spinach
  • ¼ C SMART Pesto

Directions

  1. o Preheat oven to 425F. Parchment line a baking sheet.
  2. Place meatballs on baking sheet and cook for 12-15 minutes. Remove from oven and set aside.
  3. In saute pan, heat oil in pan. Add Onion, Salt & Pepper, sauté until softened. Add Beets, sauté until softened. Add Quinoa, cook until warmed through. Add pesto and mix well. Remove from heat, add raw spinach and serve with Meatballs
