Freezer Dinner – Quinoa Bowl

I love this bowl so much for many reasons. It has great color. It’s the taste of fall. And it comes together in a flash from stuff prepped in the freezer. We’ve saved so many calories with the lightened up pesto, the broccoli in the meatballs, and the beet rice replacing ½ the quinoa.
Ingredients
- 16 Chicken Meatballs
- 1 Tbsp Olive Oil
- ½ Med Onion , diced
- 1 C Riced Beets
- Sea Salt & Pepper
- 1 C Quinoa , cooked
- 2 C Spinach
- ¼ C SMART Pesto
Directions
- o Preheat oven to 425F. Parchment line a baking sheet.
- Place meatballs on baking sheet and cook for 12-15 minutes. Remove from oven and set aside.
- In saute pan, heat oil in pan. Add Onion, Salt & Pepper, sauté until softened. Add Beets, sauté until softened. Add Quinoa, cook until warmed through. Add pesto and mix well. Remove from heat, add raw spinach and serve with Meatballs
