Eggroll in a Bowl

Egg Rolls are really high in Calories, Carbs, and Fat. The wrappers alone when fried are more than 150 calories each. And you don’t get much nutrition in the small amount of meat and veggies that are rolled inside. This version is low in calories, but extra high in flavor and nutrients. We’ve infused it with tons of fresh ginger and garlic, plus a sauce made with tamari, mirin, honey, and chili garlic.

Ingredients

  • ½ Tbsp Olive Oil
  • ½ Tbsp Sesame Oil
  • 1 Med Onion , diced
  • 2 Cloves Garlic , minced
  • 1" Ginger , grated
  • 1 Lb Pork or Chicken , ground
  • 2 C Carrot , shredded or sliced
  • 6 C Savoy Cabbage , shredded
  • 1 C Green Onions , sliced
  • 2 Tbsp Tamari (Soy) Sauce , Shoyu or Soy Sauce
  • 1 Tbsp Mirin
  • 1 Tbsp Rice Vinegar
  • 1 Tbsp Honey
  • 1 Tbsp Chile Garlic Sauce
  • 1 Tbsp Garlic , minced
  • 1 Tbsp Ginger , grated
  • Sesame Seeds

Directions

  1. Heat oil in saute pan over medium. When hot, add onion and garlic.
  2. Cook until soft and fragrant. Add ground meat and brown until cooked through.
  3. Add carrots and cabbage. Cook until softened and lightly caramelized. Add scallions, cook until softened.
  4. Mix the remaining ingredients into a slurry. Add to pan and toss with meat and vegetables to coat and heat through.
  5. Garnish with Sesame seeds.
