Dark Chocolate Pudding

This pudding is only decadent in flavor, not in calories. We used almond milk rather than cow's milk and high quality Cocoa powder and demerara sugar. The calorie burden of most chocolate puddings is much closer to 200 calories and our comes in at under 40 calories per serving without using any artificial sweeteners. The key to reducing the sugar in any recipe is balancing it with salt to help your brain stop looking for more sweetness. And in this case, we used the beautiful Hawaiian Black Lava Sea Salt.
Ingredients
- 1 C Almond Milk , unsweetened
- 1 Tbsp Raw Sugar
- 1 Tbsp Cocoa Powder
- 1 Pinch Espresso Powder (Optional)
- 1 Pinch Sea Salt
- 1 Tbsp ArrowRoot
- ¼ C Almond Milk
- 1 Tsp Vanilla Extract
Directions
- Combine milk, sugar, cocoa, espresso, and salt in sauce pan over medium heat. Cook until sugar is melted.
- Combine arrowroot with almond milk. Stir well and add to sauce pan. Cook until thickened.
- Remove from heat and add Vanilla. Cool and serve with fruit, nuts, or your preferred toppings.
