Ingredients

  • 4 oz (1/3 C) Unsweetened 99% Chocolate , diced

Directions

  1. PreHeat oven to 325°F.
  2. Line two large baking sheets with parchment paper.
  3. Melt half the chocolate in a small saucepan until just melted, then, off the heat, stir in the remaining chunks until they’re smooth.
  4. The residual heat should be enough to melt them. If not, heat the mixture again until just melted.

  • 14 Oz Sweetened, Flaked Coconut 
  • ⅓ Cup Raw Sugar
  • 6 Tbsp Cocoa Powder
  • Orange Zest
  • 1 Tsp Cinnamon
  • 1 Tsp Ancho Chili Powder
  • 3 Lg Egg Whites
  • 1 Tsp Vanilla Extract
  • Sea Salt

Directions

  1. In a food processor, blend the coconut for one full minute.
  2. hen, add sugar, cocoa, zest, cinnamon, and chili powder – and blend one minute.
  3. Add egg whites, salt and vanilla and blend until combined.
  4. Add the melted chocolate and blend until smooth.
  5. With a scoop or spoon, scoop the batter into 1-inch mounds.
  6. You can arrange the cookies fairly close together as they don’t spread, just puff a bit.
  7. Bake cookies for 15 minutes, until the macaroons are shiny and just set.
