Crispy Tofu Croutons

Ingredients

  • 16 oz (1 package) Extra Firm Tofu (firm works but needs more compression to eliminate liquid)
  • 1 Tbsp Tamari (Soy) Sauce OR Aminos (either liquid or coconut)
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Spice Mixture of your choice *

Directions

  1. Remove Tofu from package and dry with towel.
  2. Then wrap in thick kitchen and weight with a cast iron pan or heavy cookbook.
  3. Leave for about an hour to drain; the kitchen towel will absorb quite a bit of moisture from the tofu.
  4. When ready to cook, preheat the oven to 425F, use convection setting if you have it.
  5. Cut the block into bite sized cubes.
  6. Place cubes in bowl and toss with Tamari and Spice Mixture.
  7. Place on Parchment lined baking sheet and bake in oven for 20 minutes or until crispy.
