Crispy Tofu Croutons

Ingredients
- 16 oz (1 package) Extra Firm Tofu (firm works but needs more compression to eliminate liquid)
- 1 Tbsp Tamari (Soy) Sauce OR Aminos (either liquid or coconut)
- 1 Tbsp Sesame Oil
- 1 Tbsp Spice Mixture of your choice *
Directions
- Remove Tofu from package and dry with towel.
- Then wrap in thick kitchen and weight with a cast iron pan or heavy cookbook.
- Leave for about an hour to drain; the kitchen towel will absorb quite a bit of moisture from the tofu.
- When ready to cook, preheat the oven to 425F, use convection setting if you have it.
- Cut the block into bite sized cubes.
- Place cubes in bowl and toss with Tamari and Spice Mixture.
- Place on Parchment lined baking sheet and bake in oven for 20 minutes or until crispy.
