Cranberry Chutney

Ingredients

  • 1 Tbsp Olive Oil
  • ½ C Shallots , diced
  • 2 Tbsp Ginger , diced
  • 2 Tbsp Spices – I used Curry, Cinnamon, Nutmeg, All Spice
  • ½ C Raisins or other dried fruit
  • 2 C Pear , diced
  • 1 C Black Cherries (I used frozen/defrosted)
  • 1 Bag Cranberry (I used frozen/defrosted)
  • 1 C Apple Cider Vinegar
  • ½ C Sugar
  • 1 Tbsp Black Strap Molasses (I used Pomegranate Molasses from another recipe – amazing!!)
  • Sea Salt

Directions

  1. In a large saucepan over medium heat, cook onions until soft.  Add spices and cook until fragrant
  2. Add fruit, ACV, sugar, molasses, and salt. Bring to a boil, then drop to low and simmer until the cranberries are popping and the pears are soft.
