Cranberry Chutney

Ingredients
- 1 Tbsp Olive Oil
- ½ C Shallots , diced
- 2 Tbsp Ginger , diced
- 2 Tbsp Spices – I used Curry, Cinnamon, Nutmeg, All Spice
- ½ C Raisins or other dried fruit
- 2 C Pear , diced
- 1 C Black Cherries (I used frozen/defrosted)
- 1 Bag Cranberry (I used frozen/defrosted)
- 1 C Apple Cider Vinegar
- ½ C Sugar
- 1 Tbsp Black Strap Molasses (I used Pomegranate Molasses from another recipe – amazing!!)
- Sea Salt
Directions
- In a large saucepan over medium heat, cook onions until soft. Add spices and cook until fragrant
- Add fruit, ACV, sugar, molasses, and salt. Bring to a boil, then drop to low and simmer until the cranberries are popping and the pears are soft.
