Corned Beef

Corned Beef is a very traditional St Patrick’s day meal, but it’s quite rich and heavy with fat and calories. The key to lightening this dish is in the meat.

First, look for a Flat Half brisket instead of the more traditional point half brisket. Second, if you can, cook this meat one day ahead of time so you can refrigerate and skim off any fat that has hardened. And third, trim all the visible fat from the corned beef prior to cooking, it has plenty of internal fat for flavor.

Ingredients

  • 4-5 lb Corned Beef
  • 2 large Onion , sliced
  • 4 cloves Garlic , diced

Directions

  1. Preheat oven to 275F.
  2. On stovetop in a Dutch Oven, brown corned beef on both sides of the meat.
  3. Add spice packet(from corned beef package), onions, garlic, and enough water to almost cover the meat.
  4. Cover the pan (foil or dutch oven lid) and place in oven.
  5. Cook until meat is tender –appx 45 minutes per pound.
  6. Let the meat rest for 30 minutes prior to slicing it.
