There are many times when you can lighten up calorie dense dishes. This is not one of them. The integrity of the waffle from a lighter batter is just not good, in our opinion. So we decided to keep this one “as is” and cut down the serving size. In this case, it’s one quarter of a Full Belgian Waffle. And it’s perfect served with Black Eyed Peas.

Serving size 1 Waffle 120 cal Protein: 2 g Carbs: 28 g Fat: .5 g

Directions

  1. I used a Belgian Waffle Maker and used the Bob’s RedMill Gluten Free Cornbread Mix.
  2. Each Waffle was cut into quarters and served with Black Eyed Pea Soup.
