Cole Slaw (lite)

The traditional version of cole slaw has nearly 300 calories per cup. Our version is less than a third of the calories and a fraction of the sugar and fat. For flavor, we’ve added fresh ginger, lime juice, and zest!
Ingredients
- 1 Tbsp Mayo
- ¼ C Dijon Mustard
- 2 Tbsp Apple Cider Vinegar
- 1 Tbsp Maple
- 1 Tbsp Ginger , grated
- Lime Zest & Juice
- Sea Salt
- 3 C Cabbage
- 1 C Carrot
- ½ C Shallots
Directions
- In a large bowl, mix Mayo, Dijon, ACV, Maple, Ginger, Zest, Juice, and Sea Salt.
- Next, add Cabbage, Carrots, and Shallots to the bowl and blend well.
- Refrigerate prior to serving.
