Colcannon

Ingredients
- Potatoes , diced
- Beef (or other) Bone Broth (I Love Bonafide FROZEN broth)
Directions
- Dice potatoes and cover with broth
- Roughly 6 medium potatoes and 4 c broth is about perfect.
- Put potatoes in broth in a large pan over high heat.
- Boil until potatoes are fork soft.
- Drain and save the broth.
- Put potatoes in a bowl and mash with warm broth and set aside.
Ingredients
- 1-2 Tbsp EVOO or Avocado Oil
- Shallots , Scallions, or Other Onions, diced
- Umami Powder
- Sea Salt & Pepper
- Kale , Spinach, Parsley, Cilantro, or any greens you prefer – diced into bite sized pieces
Directions
- Heat oil in pan over medium heat.
- Add shallots and saute until soft.
- Add spice to onions and bloom them.
- Add greens and saute until wilted.
- Add potatoes to the greens and mix well
- Re-season with salt & pepper, as desired.
