Cobb Salad Wraps

Cobb Salad is a delicious meal, but the proportions are all off making it a calorie dense "salad". It can have anywhere from 600 to 1200 calories in each serving. This version is assembled as a lettuce wrap to be re-portioned to 328 calorie, but still packed with beautiful flavors from bacon, bleu cheese, and so much more!

Ingredients

  • 2 oz Bacon chopped
  • .5 lb Chicken , boneless, skinless, and diced
  • 1 Eggs , hard boiled and diced
  • 1/2 C Tomatoes , diced
  • 1/2 C Avocado , diced
  • 1/4 C Shallots , minced
  • 4 oz Leafy Green Lettuce
  • 1/4 C

Directions

  1. Heat skillet over medium. When hot, add bacon and cook until crispy. Remove bacon and set aside. Remove and discard of most of the bacon grease, leaving behind a very small amount (less than 1 tbsp).
  2. Season the chicken with Salt & Pepper and add to hot skillet. Cook until chicken is lightly crispy on the outside and cooked through on the inside. Remove from pan and set aside.
  3. To assemble, place lettuce on each plate, Double the lettuce if torn. Top with chicken, eggs, tomato, avocado, and shallots. Drizzle with dressing. Top with crispy bacon.
