The NYT Chopped Salad is without a doubt, a gorgeous dish, but…. 732 calories, 67g Carbs, and 47g Fat later, and this meal weighs in like a gourmet Cheese Burger! I’ve included the original recipe below so you can see the Smart Swaps I’ve made. In summary, I’ve removed all the Tortilla Chips, Buttermilk, and most of the Mayo. I moved the Avocado from the salad to the dressing, make sure you use a really ripe one so it purées into the dressing well. And for more intense flavor, I’ve added lime juice to the dressing. And I added Pumpkin seeds in place of the Tortilla Chips. By making these changes, we have lightened and brightened the entire salad. And drum roll please! We’ve reduced the calories of this salad by 350 per serving!!

Serving size 1/6 C 207 cal Protein: 7 g Carbs: 19 g Fat: 13 g

Ingredients

  • 1 Tbsp Mayo
  • 1 Tbsp Mustard
  • ¼ C Lime Juice
  • 1 Lg Avocado , ripe
  • 2 Tbsp Jalapeno , minced
  • 1 Lime Zest
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • Sea Salt & Pepper
  • ¼ C Water (if needed to thin the dressing)
  • 3 Hearts Romaine Lettuce , chopped
  • 1 C Cilantro
  • 3 Ears Corn , Shucked & Kernels removed
  • 8 Radishes , sliced into half moons
  • 3 Scallions , minced
  • 6 O Cotija Cheese , crumbled
  • Pumpkin Seed , toasted and salted

Directions

  1. Whisk together Mustard, Lime Juice, Avocado, Mayo, Jalapeno, Zest, and Seasonings together. Refrigerate for one hour.
  2. In a Large bowl, combine Romaine, Cilantro, Cilantro, Corn, Radishes, Scallions, and Cheese. Toss with Dressing and Garnish with Pumpkin Seeds.
