This salad is meant to change up the usual salad blues with some gorgeous colors. Think classic American Chicken Salad meets Persian Shirazi salad. It’s chunky and delicious and can be served as a side dish or as the main course. At 258 calories per serving, this salad fits well with many lifestyle targets and it’s well below commercial chicken salads that come in closer to 600 for the same serving size. The lime, garlic, and fresh herbs make this dish so flavorful, you’re going to forget you don’t have a full fat ranch dressing or starch paired with it. NOTE: I always make a very large bowl – it starts out as dinner for one evening and then the leftovers are packed for weekday lunches. This salad just continues to get better when the flavors sit together in the fridge!

Ingredients

  • 1 C Tomatoes , chopped
  • 1 C Cucumbers , chopped
  • ⅓ C Bermuda Onion , chopped
  • 1 Lb Chicken use any leftovers or a store-bought rotisserie, cut into chunks
  • 2-3 Cloves Garlic , minced
  • ¼ C Lime Juice
  • 6 Servings Green Goddess Dressing
  • Fresh Mint
  • Fresh Parsley

Directions

  1. In a large salad bowl, mix together tomatoes, cucumbers, onion, chicken, and garlic.
  2. Add lime juice and Green Goddess Dressing to the bowl and toss. 
  3. Add mint, parsley, salt & pepper – and toss one final time.
  4. NOTE: Chicken can be smart swapped with any meaty protein, like salmon or steak for an equally delicious result.
