Chicken Burgers

These burgers are deliciously moist and stand on their own as a meal. The pineapple adds a gorgeous sweetness which is concentrated when you grill them. And the guacamole adds a richness that regular burgers just don’t have. Almond flour is one of our favorite smart swaps in place of bread crumbs because it’s much lower in carbs, higher in protein, with a great nutty flavor.
Between the pineapple and guacamole, these burgers are really moist. But if you’d like to add a sauce – we recommend a whole grain mustard.
Ingredients
- 1 Tbsp Avocado Oil
- 1 Lb Ground Chicken
- Easy Guacamole
- ¼ C Almond Flour
- 2 Cloves Garlic , minced
- Sea Salt & Pepper
- 4 Pineapple Rings
- Butter Lettuce , any lettuce with large enough leaves to wrap the burgers
Directions
- Mix Chicken, Guacamole, Flour, Garlic, Salt & Pepper.
- OPTIONAL: refrigerate for one hour before forming burgers (they hold together better).
- You can make this mixture up to 24 hours in advance – so we like to make them during meal prep the night before.
- Heat pan (or BBQ, if grilling outdoors) on medium. Add oil.
- Form into four patties and cook on stove top (grill pan or skillet).
- When oil is hot, add burgers to pan and cook on both sides ensuring that the burger is completely cooked through. Set aside.
- Add pineapple rings to same pan and grill on both sides.
- To assemble: Begin with lettuce on the plate. Add burger and one pineapple ring.
