Charred Snap Peas w/ Smoked Trout

Ingredients
- Olive Oil
- Snap Peas
Directions
- Heat oil in saute pan over medium heat. Add snap peas. Cook until lightly charred. Season with Salt and Pepper.
- Mix Dijon, Zest and Juice together and coat snap peas.
- Add smoked trout to pan to lightly warm.
- Serve immediately or at room temperature.
- NOTE: This recipe is very flexible and can be made snow peas, green beans or asparagus. As well, smoked salmon or any grilled fish or shell fish is excellent.
