Cauliflower Dressing

We all know that the traditional Thanksgiving meal is a carb fest. But the Mac-Daddy in the carb category is the dressing weighing in at close to 400 calories per serving and more than 40 grams of carbs. You have choices on what to do with your Thanksgiving plate. You can skip the Dressing all together. You can take one or two bites and move on to other items. Or, you can try this absolutely delicious, low carb version and leave plenty of room for other Thanksgiving favorites!

Serving size 1/2 C 58 cal Protein: 0 g Carbs: 4 g Fat: 5 g

Ingredients

  • 4 Tbsp Butter
  • 1 Tbsp Olive Oil
  • 1 C Onion , chopped
  • 2 C Carrot , chopped
  • 2 C Celery , chopped
  • 2 Cloves Garlic , diced
  • 2 Tsp sage
  • 1 Tbsp Rosemary
  • 1 Tsp Thyme
  • Salt & Pepper
  • 1 Head Cauliflower , chopped
  • 8 Oz Baby Bellas , chopped
  • ½ C Broth
  • ¼ C Parsley , diced

Directions

  1. In Pan over Medium heat, melt butter and oil.
  2. Add onion, carrot, and celery – saute until soft, 7-8 minutes.
  3. Add spices and saute until fragrant.
  4. Add cauliflower, mushrooms – saute until tender, 8-10 minutes.
  5. Pour broth into pan and cook until tender and liquid is absorbed, 10 minutes. 
  6. Add parsley and serve.
  7. NOTE*: If you make this once the Turkey is resting, you can add some turkey drippings to the broth; such a lovely richness can be achieved in an otherwise lean dish.
