Cauliflower, Chorizo & Cheese

Just by roasting the cauliflower instead of boiling it, we’ve created so much more flavorful with almost no additional calories. The other way we keep the calories low and the flavor high is with a small amount of really flavorful meat. In this case, it’s Chorizo, or Soyrizo if you prefer, cooked until crispy and crumbled over the top of this gorgeous dish.

Serving size ¼ C 205 cal Protein: 12 g Carbs: 11 g Fat: 14 g

Ingredients

  • 1 Tbsp Olive Oil
  • 4 C Cauliflower , floret
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Garlic Powder
  • Sea Salt & Pepper
  • 2 Lemon , cut in half

Directions

  1. PreHeat oven to 375F. Parchment line a baking sheet. Set Aside.
  2. Place cauliflower on baking sheet. 
  3. Toss with Oil and Spices. 
  4. Add lemons to the baking sheet.
  5. Place in oven and roast until lightly crispy, approximately 20 minutes. Set Aside.

Ingredients

  • 4 Oz Chorizo or Soyrizo
  • ¼ C SMART Nacho Sauce
  • ½ C Water

Directions

  1. Cook chorizo in saute pan over medium until crispy.
  2. Remove from pan and set aside.
  3. Add SMART Nacho Sauce to a saucepan on low heat. Add water, if needed. Adjust seasoning and set aside.
  4. Divide Cauliflower into 4 bowls.
  5. Squeeze lemon juice over each. 
  6. rizzle Nacho Cheese over the top of the Cauliflower. Finish with crumbled Chorizo.
