Catalina dressing is a sweet and tangy dressing and beautiful on summer salads of greens, sweet corn and bell peppers. It’s made with a puréed tomato base added to a vinaigrette. The commercial version of this dressing has a lot of added sugar, so we’ve eliminated that in favor of a more flavorful honey and a barrel aged Sherry Vinegar for more depth than a standard Red Wine Vinegar.

Ingredients

  • ½ Can of Tomato Paste
  • 1 Tbsp (1/2 Blob) Mustard
  • 2 Tbsp (Blobs) Honey (adjust to your palate)
  • Salt & Pepper
  • 1:1 Oil to Acid Ratio (1/4 C Each)

Directions

  1. In a bowl, combine paste, Dijon, honey, Worcestershire, salt & pepper.
  2. Add vinegar and oil and mix well.
  3. TIP: Use a jar or bowl with a lid and shake the dressing for better blending.
