Caramelized Mushroom, Onion, & Squash Soup
This flavorful soup is bound to be one of your newest favorites. Squash soup traditionally is heavily laden with dairy and calories. Our version has trimmed all the dairy out, so Vegans will delight in enjoying this dish. But you won't miss the dairy because we included our phenomenal Roasted Squash Sauce as the base and added caramelized onion broth and sauteed mushrooms for more flavor and texture.
Ingredients
- 1 Tbsp Olive Oil
- 1 Medium Onion , diced
- 8 oz Mushrooms , diced
- 2 Cloves Garlic , minced
- Sea Salt & Pepper
- 2 C SMART Roasted Squash Sauce
- 2 C SMART Caramelized Mushroom Onion
Directions
- In a soup pot over medium, heat oil. When hot, add onion – cook until soft. Add garlic, salt & pepper – cook until fragrant. Add mushrooms, mix with onions, and cook until softened. Add sauce and broth. Bring to a soft boil, reduce heat and simmer for 20 minutes
- To serve, ladle into shallow bowls.
