Caesar Dressing

Most bottled Caesar dressings are about 160 calories for 2 Tbsp and 150 of the calories come from fat. We have lightened this dressing quite a bit by eliminating much of the oil, mayo, and sugar. We use flavorful anchovies, garlic, lemon juice, and freshly grated Parmigiano-Reggiano cheese.
Ingredients
- 2 oz Anchovies ,oil packed
- 1 Cloves Garlic ,coarsely chopped
Directions
- Make a paste with anchovies and garlic using a knife.
- Mince the anchovies and garlic together, then rub the knife blade back and forth across the anchovies and garlic.
- When combined as a paste, set aside.
Ingredients
- 3 Egg Yolk(s)
- 1 Tbsp Dijon Mustard
- 2 Tbsp Lemon Juice
- ½ Cup Olive Oil
- 2 Tbsp Parmigiano-Reggiano Cheese
- Pepper
Directions
- Whisk the egg yolks until smooth. Add Mustard, Anchovy paste – whisk until combined.
- While whisking – add Lemon juice and Olive Oil.
- Finish with Cheese.
- Season with Pepper to taste.
