Caesar Dressing

Ingredients
- 2 oz Anchovies , oil packed
- 2 cloves Garlic , coarsely chopped
- 3 Egg Yolk(s)
- 1 Tbsp Dijon Mustard
- 2 Tbsp Lemon Juice
- ½ C EVOO
- 2 Tbsp Parmigiano-Reggiano Cheese
- Pepper , freshly ground
Directions
- Make an anchovy paste with anchovies and garlic.
- Whisk the egg yolks until smooth.
- Add Mustard, Anchovy paste – whisk until combined.
- While whisking add Lemon juice and EVOO.
- Finish with Cheese and season with Pepper to taste.
