Buffalo Shrimp & Sautéed Celery

Ingredients

  • 2 Tbsp SMART Buffalo Sauce
  • 1 lb Shrimp
  • ¼ C Olive Oil
  • 1 Tbsp Butter , unsalted
  • 1 Med Onion , diced
  • 2 Tbsp Garlic , minced
  • Sea Salt & Pepper
  • 2 C Celery , diced
  • ¼ C SMART Lemon Blue Cheese Dressing

Directions

  1. In a bowl, toss Shrimp with Buffalo sauce. Set aside.
  2. In a sauté pan over medium, add oil and butter. 
  3. When butter is melted and hot, add Onion, cook until soft.
  4. Add Garlic, Salt & Pepper, cook until fragrant. 
  5. Add Celery, cook until soft.  Remove from heat and toss with Parsley. 
  6. Remove from pan and set aside.
  7. In same pan, return to heat. When hot, add shrimp and cook until opaque and cooked through.
  8. To serve, divide celery amongst 4 bowls. Top with shrimp, and drizzle with dressing.
