Buffalo Chicken Chili (V)

I love the tang and spice of great Buffalo Wings, but sometimes you want something a bit more mellow. In this dish, we opted to add this beautiful Buffalo sauce to a ground chicken and take an ordinary chili way past extraordinary for a rich, soul-satisfying dish. The calories of this dish as compared to a traditional chili are lightened by using chicken in place of beef and changing the ratio between the chicken and the beans. The brightness in this dish is created by lots of spices that are bloomed at the beginning and buffalo sauce that was added toward the end.

Buffalo Chicken Chili

Serving size ½ C 337 Cal Protein: 28 g Carbs: 23 g Fat: 15 g

Ingredients

  • 2 Tbsp Olive Oil
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • Spices (I used Smoked Paprika, Cumin, and Ancho Chili Powder)
  • 2 lbs Ground Chicken
  • 5 C White Beans (I use the Instapot to cook from scratch)
  • .5 C SMART Buffalo Sauce – the whole batch
  • 2 C Chicken Bone Broth

Directions

  1. Heat oil in soup pot on Medium.
  2. Add onion, garlic, and spices.
  3. Cook until soft and fragrant.
  4. Add raw chicken and cook thoroughly.
  5. Add white beans, buffalo sauce and bone broth.
  6. Bring to a boil.
  7. Drop temperature, and simmer for 20ish minutes so the flavors can blend and develop.
