Braised Shiitakes and Beef
Meal: 200 cal Protein: 19 g Carbs: 8 g Fat: 10 g
These two lovely dishes have in essence the same sauce with a slightly different finish which makes them absolutely perfect as a stand alone dish or as part of a larger holiday celebration.
The average Beef with Broccoli at a restaurant is well over 400 calories – their sauce is much heavier and the dish is served with white rice. By adding mushrooms to our version, we’ve both reduced the serving of red meat and eliminated the need for rice. Additionally, our sauce is broth-based and all the sugar has been removed in favor of a very small amount of honey.
Ingredients
- 4 oz Shiitake Mushrooms
- 8 C Hot Water
Directions
- Submerge mushrooms in hot water and soak for 4 - 24 hours
- Drain and retain mushroom broth.
- Use scissors to cut off stems and set aside.

- 1 Tbsp Avocado Oil
- 1 Tbsp Ginger , thinly sliced discs
Directions
- Heat oil in pan over medium heat.
- Add ginger until fragrant
- Add mushrooms and saute briefly.
Ingredients
- 1 Tbsp Oyster Sauce
- 1 Tbsp Tamari (Soy) Sauce
- 1 Tsp Honey
- 1 C Mushroom Broth
Directions
- Mix oyster sauce, tamari, honey and broth
- Add to pan with mushrooms; simmer for 30-45 minutes, or until sauce has reduce to syrupy and mushrooms are pliable
- Remove from pan and into serving dish.

- Broccoli , chopped
- 1 Carrot , sliced
- Water
- Sea Salt
Directions
- Soak broccoli in salt water for 5 minutes and then rinse.
- Bring water to a boil and cook broccoli for 1-2 minutes.
- Remove and set aside.
- Add carrots to boiling water and cook for 1-2 minutes.
- Remove and set aside.

- 1 lb Beef , julienned
Directions
- Heat oil in pan over medium heat.
- Add scallions and ginger until fragrant.
- Toss beef with arrowroot and add to pan.
- Cook until beef is browned.

- 1 Tbsp Avocado Oil
- 4 Scallions , sliced on diagonal
- 1 Tbsp Ginger , thinly sliced discs
- 1 Tsp Arrowroot
- 1 C Mushroom Broth
Directions
- Mix Oyster sauce, tamari, honey, arrowroot and broth.
- Add to pan with beef.
- Add vegetables.
- Bring to a boil, reduce heat and simmer until thickened.
- Add to serving dish with Braised Mushrooms.
