Braised Cabbage

Braised cabbage is sweet, tart, and hearty. Add in a little bit of bacon and it gives the cabbage a real umami quality. Normally, this dish is an add on to meat dish like braised corned beef. We’ve simulated that flavor using bacon crumbles and a small amount of the bacon fat to flavor the vegetables.
Braised Cabbage
Serving size 1/8 C 64 Cal Protein: 2 g Carbs: 8 g Fat: 3 gIngredients
- 2 Tbsp Bacon Grease
- 1 medium Purple Onion , diced
- 1 Tbsp Smoked Paprika
- 1 Tbsp (or any combo of spices you prefer)
- 1 Tbsp Cumin
- 1 Tbsp Ancho Chili Pepper
- 1 medium head of Cabbage , cut into threads
- 1/3 C Vinegar (I used Sherry, but use any Vinegar you prefer)
Directions
- Heat sauté pan over medium heat.
- Add bacon and cook until crispy.
- Remove bacon to paper towel lined plate.
- Remove all bacon fat to separate container. Set both aside.
- Heat 2 tbsp Bacon Fat in cast iron pan.
- Add onion and spices and cook until fragrant and soft.
- Add cabbage, cook until fragrant and softened.
- Add Vinegar and cook until liquid is absorbed and cabbage is caramelized.
- Serve topped with crumbled bacon.
TO SERVE
- Start with large leaves of lettuce or your favorite tortilla. Add beans. Then add cabbage. Finish with fresh herbs or your favorite cheese. Enjoy!
