Braised Cabbage

Braised cabbage is sweet, tart, and hearty. Add in a little bit of bacon and it gives the cabbage a real umami quality. Normally, this dish is an add on to meat dish like braised corned beef. We’ve simulated that flavor using bacon crumbles and a small amount of the bacon fat to flavor the vegetables.

Braised Cabbage

Serving size 1/8 C 64 Cal Protein: 2 g Carbs: 8 g Fat: 3 g

Ingredients

  • 2 Tbsp Bacon Grease
  • 1 medium Purple Onion , diced
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp (or any combo of spices you prefer)
  • 1 Tbsp Cumin
  • 1 Tbsp Ancho Chili Pepper
  • 1 medium head of Cabbage , cut into threads
  • 1/3 C Vinegar (I used Sherry, but use any Vinegar you prefer)

Directions

  1. Heat sauté pan over medium heat. 
  2. Add bacon and cook until crispy.
  3. Remove bacon to paper towel lined plate.
  4. Remove all bacon fat to separate container. Set both aside.
  5. Heat 2 tbsp Bacon Fat in cast iron pan.
  6. Add onion and spices and cook until fragrant and soft.
  7. Add cabbage, cook until fragrant and softened.
  8. Add Vinegar and cook until liquid is absorbed and cabbage is caramelized.
  9. Serve topped with crumbled bacon.

TO SERVE

  • Start with large leaves of lettuce or your favorite tortilla. Add beans. Then add cabbage. Finish with fresh herbs or your favorite cheese. Enjoy!
