This frittata-style dish is a classic in South African feasts. These eggs are infused with the bright flavors of Africa – Chutney, Curry, and multiple spices. This is a wonderful, low-carb, high flavor dish.

- 2 slices Bread , soaked in cold water

- Preheat oven to 350F.
Ingredients
- 1 Tbsp EVOO
- 2 Onion , diced
- 2 cloves Garlic , minced
Directions
- Heat EVOO in saute pan over medium heat.
- Add onions and cook until soft.
- Add garlic and cook until fragrant and the onions started to brown.
Ingredients
- 1 lb Ground Lamb (or other ground meat)
- 2 Tbsp Madras Curry Paste
- 1 Tbsp Coriander Lime
- 1 Tsp Cloves
- 1 Tsp All Spice
- 2 Tbsp Chutney
- 3 Tbsp Sultanas (or raisins)
- 6 Bay Leaves
Directions
- Add ground meat and stir well, breaking up the large pieces.
- Add curry paste, spices, chutney, sultanas, and bay leaves. Finish with salt & pepper.
- Reduce heat to low, cover and simmer for 10 minutes.
Ingredients
- 3 large Eggs , whisked
- 2 Tbsp Cream Coconut Milk
Directions
- Squeeze water from the bread, add into the meat mixture until blended well.
- Spread meat and bread mixture evenly in pan.
- Beat egg and milk together with salt & pepper.
- Pour over meat.
- Move to oven and bake for 35-40 minutes or until topping is set and turning golden.
