BLT Zoodles

Ingredients
- ¼ C Quinoa , cooked
- 4 Oz Bacon , chopped into 1” pieces
- 1 Tbsp Bacon Fat
- 2 C Zoodles
- ½ C SMART Tomato Vinaigrette
- 2 C Lettuce Leaves , chopped
- ¼ C Scallions , sliced
- 16 SMART Oven Dried Tomatoes
Directions
- PreHeat Oven to Broil. Parchment line baking sheet.
- lace quinoa in single layer on baking sheet on top rack right in oven.
- Broil for 3-5 minutes, until browned and crispy. Set aside.
- Heat cast iron skillet over Medium.
- When hot, add bacon and cook until crispy. Remove bacon to paper towels.
- When cool, crumble the bacon. Set Aside
- Drain off the Bacon fat from the pan except 1 Tbsp and return to heat.
- Add Zoodles and cook until softened and fragrant. Season with Salt & Pepper. Set Aside.
- In a salad bowl, add Vinaigrette, Lettuce, Scallions, and Tomatoes. Mix Well.
- TO SERVE: Divide greens into 4 Salad Bowls. Top with hot Zoodles, Bacon, and Quinoa.
