BLT (Bacon Lettuce and Tomato) Salad

With a Salad this good, you’ll never miss the bread! We’ve made another Smart Swap in the protein by adding Chicken breast in place of some of the bacon. Very fortunately, while bacon is high in calories in fat, it’s also very high in flavor – so a little goes a very long way. The same with the Cotija Cheese – it’s a very salty, flavorful cheese – so it only takes an ounce on each salad to really have an impact. And look at our two-ingredient dressing for the win – Easy Guacamole and whatever citrus you have on hand.

Serving size ½ C 400 cal Protein: 23 g Carbs: 9 g Fat: 27 g

Ingredients

  • 2 Oz Bacon , uncured (no nitrates, no nitrites), diced
  • 12 Oz Chicken Breasts , diced
  • Sea Salt & Pepper
  • ¼ C Easy Guacamole
  • ¼ C Lemon Juice , or Lime juice
  • 4 Med Tomatoes , diced
  • 4 Heads Romaine Lettuce , shredded
  • 4 Green Onions , sliced
  • 4 oz Cotija Cheese , crumbled

Directions

  1. Heat a saute pan on medium, when hot add bacon pieces. Cook until crispy. Remove with a slotted spoon to a paper towel to drain excess bacon grease. Set aside.
  2. Remove pan from heat and pour off most of the grease leaving 1 tbsp or less behind in the pan.
  3. Return to heat. Season chicken with salt & pepper. 
  4. When pan is hot, add chicken.  Cook thoroughly until all pink is eliminated. 
  5. Remove from pan and set aside.
  6. In small bowl, mix Easy Guacamole and citrus juice until well combined.
  7. In Salad bowl, combine tomatoes, lettuce, onions, and cheese. 
  8. Add Bacon and Chicken.
  9. Add dressing, mix well, and divide into 4 dishes.
