This is a great side to any meal, and especially to a South African feast. The sweetness of the peaches and apricots really offsets the heat from the chiles and spices. And the whole dish is brought together by the brightness of the lemon juice. We substantially reduce the calories of this dish by reducing the sugar from 1 lb to ½ C. By adding more chile powder and lots of lemon juice and Black Strap Molasses for richness, we don’t think for a minute you’ll miss the extra sweetness.

Ingredients

  • 1 lb Peaches , dried
  • ½ lb Apricots , dried
  • ¾ C Vinegar

Directions

  1. Soak Peaches and Apricots in Vinegar overnight to re-hydrate them.
  2. Use Food Processor or Blender to dice them into small pieces.

  • 1 Chili Pepper whole, dried
  • Sea Salt

Directions

  1. Place all ingredients in a pot and heat gently for 20 minutes to allow the sugar to dissolve thoroughly.
  2. Simmer on medium heat for about an hour without covering and stirring occasionally.
  3. Remove from heat and cool for 15 minutes prior to bottling.
