Black Eyed Peas

The first step in making a great Black-Eyed Pea dish is to make great Black Eyed peas. The Instant Pot is a wonderful way to do this and they come out perfectly every time. For the actual soup, I prefer a stovetop to really build more flavors, but save yourself a lot of cooking time by pre-cooking the beans first, then make your soup (see recipe in the picture: Black-Eyed Pea Soup).

Black Eyed Peas

Serving size ½ C 66 cal Protein: 3 g Carbs: 9 g Fat: 2 g

Ingredients

  • 1 Tbsp EVOO
  • 1 medium Onion , diced
  • 1 clove Garlic , minced
  • Spices – Coriander, Cumin, Oregano, Ancho Chili Powder, Smoked Paprika, Salt & Pepper
  • 1 lb Black Eyed Peas , dried
  • 3 C Broth – Chicken, Beef, Bone, Vegetarian, or other
  • 3 C Water

Directions

  1. Heat olive oil on “saute” setting in Instapot.
  2. When hot, add onion, garlic, and spices.
  3. When soft and fragrant, add peas, broth, and water.
  4. Follow directions on your Instapot for Beans. On mine, I use the “rice” setting.

HINT

  • Black Eyed Peas can also be made ahead of time in either a crockpot or on the more traditional stove top method with overnight soaking.
