Black Bean Enchiladas

Black Bean Enchiladas have all the classic flavors and less than half the calories. Much of the savings is in steaming rather than frying the tortilla. The second biggest savings is the elimination of all the cheese in favor of this Nacho Cheese sauce.

Serving size 2 Enchiladas 325 cal Protein: 12 g Carbs: 58 g Fat: 5 g

Ingredients

  • 1 C Onion , diced
  • 1 C Bell Peppers , diced
  • ½ C Poblanos , diced
  • 2 Cloves Garlic , minced
  • 1 Tbsp Chili Powder
  • 1 Tbsp Smoked Paprika
  • 1 Tbsp Cumin
  • 30 Oz (2 Cans) Low Sodium Black Bean , drained & rinced

Directions

  1. PreHeat oven to 375F.
  2. Fill bottom of 9x12 Casserole Dish with ½ C enchilada sauce. Set Aside.
  3. In Sauté pan over medium, heat oil. 
  4. When hot, add onions and bell peppers.  When soft, add garlic and spices.
  5. Cook until fragrant. Add black beans, mix well, coat with spices. Set Aside.

  • 12 Corn Tortillas
  • ½ C SMART Nacho Sauce
