Black and Bleu Stuffed Mushroom Slider

Beef and Bleu Cheese are both high calorie items, so the key to enjoying them and not derailing your weight loss plans is portion size. So we’ve created a “slider” that uses a mushroom “bun”. This “slider” is so flexible. It can be made into a small appetizer size, a larger side dish size, and a double mushroom bun main dish size.

Ingredients

  • 1 Lb Mushrooms (36-40 small mushrooms, 18-20 large ones)
  • 1 Tbsp Olive Oil
  • Sea Salt & Pepper
  • ½ lb Ground Beef
  • ¼ C Dehydrated Onions
  • ¼ C Bleu Cheese
  • 2 Tbsp Chives
  • 1 Tbsp Worcestershire Sauce
  • ¼ C Almond Flour (more if the mixture is too wet)

Directions

  1. Preheat oven to 425F
  2. Remove stems from mushrooms and place cap side down in ceramic dish. Drizzle with Olive Oil, Salt & Pepper. Cook for 10 minutes. Set aside.
  3. Combine Beef, Onions, Cheese, Chives, Worcestershire Sauce, Flour, and Seasonings. Form into balls and stuff each of the mushroom caps. Cook for 10-15 minutes (longer if you are using the larger mushrooms.
  4. Remove from oven and enjoy!
