Beet and Sweet Potato Slaw

Forget everything you know about Cole Slaw and try this one. It’s fresh, sweet, and delicious. And it’s the perfect accompaniment to many other dishes. It balances Rich Carnitas or Spicy Shrimp. And it’s the perfect topping to a grilled Fish Taco. Raw Beets, Raw Sweet Potato, and Raw Apple – who knew this would be sooooooo good! If you have a Mandolin with a shredder blade on it – fantastic! If you don’t, no worries, a traditional cheese grater or a sharp knife work, too. This salad naturally has a lot of fiber which is great for our bodies and limiting Carbs (there are 11g Net Carbs). But we’ve also kept the fat and calories down by offsetting Mayo with Mustard. Then we amp up the flavor with fresh citrus juice and zest and finish it with a healthy serving of fresh herbs.

Beet and Sweet Potato Slaw

Serving size ½ C 74 cal Protein: 1 g Carbs: 14 g Fat: 2 g

Ingredients

  • 2-3 Shallots mandolin sliced
  • 1 C Apple mandolin sliced
  • 1 C Sweet Potato mandolin sliced
  • 1 C Beets mandolin sliced
  • 1 C Napa Cabbage sliced
  • 2 Lemon Zest

Directions

  1. In Salad Bowl, combine Shallots, Apple, Sweet Potato, and C. Set Aside.

Ingredients

  • 3 Tbsp Mustard
  • 1 Tbsp Mayo
  • 1 Tbsp Chile Garlic Sauce
  • 1 Orange
  • 1 Lime
  • Sea Salt & Pepper

Directions

  1. In a separate bowl, combine Mustard, Mayo, Honey, Chile Garlic Sauce, Lime Juice, Salt & Pepper. 
  2. Add Mustard mixture to salad bowl and mix well. Even better if made a day ahead.

Ingredients

  • Cilantro minced
  • Mint Leaves torn

Directions

  1. Garnish with Cilantro and Mint.

  • *If you don’t have a mandolin, you can shred the veggies on a cheese grater or you can cut matchsticks with a knife.
