Beet Chips

Homemade beet chips are incredibly easy, more nutritious and so much easier on the calories and fat than a bag of grocery store potato chips. One 8oz bag is over 1200 calories and 79g of Fat. These are amazing with very little oil added to them, but don’t forget to salt them well or they will be dull in flavor and texture.

Beet Chips

Serving size ¼ of a Beet 56 cal Protein: 1 g Carbs: 6 g Fat: 3 g

Ingredients

  • 1-2 large Beets (skins on or off – your preference)
  • 1 Tbsp EVOO
  • Sea Salt

Directions

  1. Preheat oven to 425F.
  2. Parchment line a baking sheet.
  3. Using a mandolin, slice the beets and place on baking sheet.
  4. Using a pastry brush, brush each slice with EVOO.
  5. Sprinkle with salt.
  6. Bake until crispy – 20 to 30 minutes.
  7. Serve with: Guacamole (purchased or homemade)
