Beef and Broccoli Meatloaf

There’s nothing homier than a meatloaf hot out of the oven, but the calories can be as high as 700 for one serving. We’ve reduced the calories in a way you’ll hardly notice – by replacing half the meat with riced broccoli. And then we intensified the flavor with our delicious Pineapple BBQ sauce, Garlic, and Smoked Paprika.
Ingredients
- 1 Lb Ground Beef
- 3 C Broccoli , raw and riced
- 3-4 Cloves Garlic , minced
- 3 Lg Eggs , beaten
- ⅓ C SMART Carolina BBQ Sauce
- ⅓ C Oats
- ⅓ C Dehydrated Onions
- 1 Tbsp Smoked Paprika
- Sea Salt & Pepper
- 2 Tbsp SMART Carolina BBQ Sauce
Directions
- Preheat oven to 400F. Parchment line a baking sheet.
- Mix all ingredients together.
- Form a loaf on baking sheet.
- NOTE: make sure the height of the loaf is consistent and better if it’s under 3” tall. It will cook faster and more evenly.
- Bake for 40 minutes.
- Baste the top of loaf with remaining BBQ Sauce.
- Cook for 10 minutes more or until cooked through.
