Banh Mi Sliders

These sliders are absolutely packed with flavor – pickled vegetables, banh mi spices, and cilantro. We can easily keep them under 100 calories by using a lettuce wrap or a daikon radish “tortilla”. But if you want a more tradition preparation, serve these sliders on a piece of crusty French bread, just add 50 calories.
Banh Mi Sliders

- 1 Medium Cucumbers , thinly sliced
- 2 Medium Radishes , thinly sliced
- 1 Small Carrot , thinly sliced
- ½ C Rice Vinegar
- ½ C Water
- 1 Tbsp Honey
- 1 Lb Ground Pork
- ¼ C Dehydrated Onions
- 3 Tsp Ketchup
- 1 tbsp Garlic , minced
- 1 tbsp Ginger , minced
- 1 Tsp Honey
- 1 Tsp Fish Sauce
- 1 Tsp Sesame Oil
- 1 Tsp Tamari (Soy) Sauce
- Sea Salt & Pepper
- 1 Tbsp Olive Oil
- French Bread Roll
- 2 Tbsp Mayo
- Cilantro
Directions
- Combine Pork, Onion, Ketchup, Garlic, Ginger, Honey, Fish Sauce, Sesame Oil, Tamari, and Seasonings. Set Aside.
- In a small pan over medium heat, combine Vinegar, Water, and Honey. Bring to a boil and remove from heat. Pour over the top of the Cucumbers, Radishes, and Carrots. Set Aside.
- Heat oil in Saute pan (best if cast iron) over medium. When hot, press pork mixture into the saute pan. Cook first side until crispy. Divide into 8 pieces utilizing a spatula, flip each piece and cook second side. When cooked through, remove from heat.
- To assemble, slice open bun, spread small amount of mayo, top with pickled vegetables and a pork slider. Finish with a cilantro garnish.
