Sure, you can slice an avocado onto to make Avocado Toast, but check out the flavor profile on this dish. And we complete it with one perfect egg to round out the protein and make it more of an ample meal.

Serving size 1 Toast 269 cal Protein: 7 g Carbs: 23 g Fat: 7 g

Ingredients

  • 1 Lg Eggs
  • 1 Slice Whole Grain Bread
  • 2 Tbsp Easy Guacamole
  • Tomatoes , sliced
  • Sea Salt & Pepper

Directions

  1. To poach the egg, add water to a small sauce pan over medium heat.
  2. When lightly boiling, add 1 tbsp vinegar and crack the egg gently into the water. 
  3. Drop heat to simmer and cook until desired doneness.
  4. For a runny yolk, cook 3-4 minutes. Longer if you prefer a more jammy or cooked yolk.
  5. Remove egg from water with slotted spoon and gently rest on paper towel to absorb excess water.
  6. Immediately season with Salt & Pepper.
  7. NOTE: Scrambled or fried are also great options (add +100 cal for each Tbsp of butter or Olive Oil used in the pan).
  8. Toast Bread. Spread Guacamole on toast and top with sliced tomatoes. Add egg and finish with Salt & Pepper.
