Almond Cookies (v)

These cookies are amazingly light because of the egg whites and simultaneously ampler because of the almond flour. Most cookies are closer to 150 calories, and a lot more for the ones from bakeries. But these cookies are perfect for occasionally enjoying without serious damage to your weight loss plan.

Almond Cookies

Serving size 1 Cookie 48 cal Protein: 1 g Carbs: 9 g Fat: 1 g

Ingredients

  • 3 Egg Whites
  • ½ C Raw Sugar
  • 3 C Almond Flour
  • 1 Tbsp Almond Extract , or Vanilla Extract
  • Pinch of Sea Salt
  • Fold in egg whites, being careful not to over mix or deflate the egg whites. Black Cherries (I keep them in my bar for Manhattans), drained and cut ½.

Directions

  1. Preheat 350F and parchment line a baking sheet.
  2. In medium bowl, whip egg whites until peaks form and set aside.
  3. In large bowl, combine sugar, flour, extract, and salt.
  4. Fold in egg whites, being careful not to over mix or deflate the egg whites.
  5. Scoop spoonful of dough onto baking sheet. Smooth the dough and press a cherry on each one.
  6. Bake for 12 to 15 minutes or until lightly brown. Cool for 10 minutes
